Barbeque Chicken Leg Quarters
We are deep into grilling season here in Paso Robles, no way I’m firing up my oven to heat up the house…it’s hot enough! These leg quarters are delicious and inexpensive, so do a big batch and enjoy the leftovers. I like them with grilled Mexican Street Corn Salad!
Ingredients
- 6 bone in leg quarters
- 1 cup barbeque sauce, brand of your choosing
- 3 tablespoons barbeque spice rub
Directions
- Dry your leg quarters with a paper towel.
- Liberally apply your BBQ rub and let sit for half an hour
- Fire up your grill to medium and put your quarters on skin side down, cook for 15 – 20 minutes, then flip and cook for another 15 – 20 minutes. Flip again and apply BBQ sauce, cook for 10 minutes then flip and apply BBQ sauce and cook an additional 10 minutes.
- Insert meat thermometer into thickest part of the thigh and make sure it registers at least 165 degrees.
- Let rest for 10 minutes, enjoy!
