Grilled Pork Ribs
Long summer nights call for grilled pork ribs, at least in my world they do! I generally bring out all the stops and make macaroni and cheese and slaw for my sides, though a simple salad would be just fine.
Ingredients
- 2 tablespoons paprika
- 1 tablespoon salt
- 1 tablespoon black pepper
- 2 tablespoons brown sugar
- 1 tablespoon chili powder
- 2 teaspoons ground cumin
- 1 1/2 ground coriander
- 3/4 teaspoon cayenne
- 2 racks of ribs (2 1/2 pounds each)
- 1/4 cup yellow mustard
- 1 cup of your favorite BBQ sauce
Directions
- Mix all dry ingredients in small bowl, set aside.
- Use sharp knife to remove any silverskin on the back of each rack of ribs.
- Coat each side of both racks with yellow mustard and apply dry rub evenly, wrap tightly with foil and marinate for up to 24 hours.
- Once marinated, take out of refrigerator at lease an hour before putting on preheated medium heat grill
- Cook over direct heat for 1 hour
- Remove the foil and put back on grill, baste with barbeque sauce, flip twice and baste each time cooking 10 minutes or so on each side each time you flip. You’ll know the ribs are ready when they hang down when you flip them, that means the connective tissue has broken down sufficiently between the ribs.
- Let rest for at least 10 minutes before cutting and serving.
