Lamb Burgers with Harissa Aioli

Want to spice up your burger game?  Try these lamb burgers for a little international flare!  Delicious on brioche buns and a perfect pairing with our 2016 Mourvèdre, serve chilled.

Ingredients

  • 1/2 cup mayonaisse
  • 4 teaspoons harissa
  • 1 large garlic clove, chopped fine
  • 1 1/3 pounds of freshly ground lamb
  • 4 brioche buns
  • 2 ounces feta cheese
  • 2 cups baby arugula
  • 3/4 cup caramelized onions
  • 4 slices tomato
  • salt and pepper to taste

Directions

  1. Mix first 3 ingredients and set aside.
  2. Heat a cast iron skillet over medium heat until hot.
  3. Divide ground lamb evenly and form 4 burger patties, season both sides with salt and pepper.
  4. Sear burgers on each side for 5 minutes or until internal temperature reaches 160 degrees Fahrenheit.
  5. Slather bottoms of each bun with aioli and top with burger, feta, tomato, caramelized onions, and arugula, Serve.
