Salmon with Lemon and Mushroom Orzo

This recipe comes together in about 30 minutes and is always delicious.  Orzo is my newest favorite carbohydrate and it is so versatile, add a piece of  beautifully seared wild salmon to it and it’s also quite healthy! Add spinach if you like, or roast some asparagus, or broccolini, just to add a bit more veg to your meal.

Ingredients

  • 4 - 6oz Salmon Filets
  • 1 1/2 cups of orzo
  • 1 shallot
  • 4oz cremini mushrooms
  • 1 large lemon, will use zest and juice
  • 2 1/2 cups chicken stock
  • 6 oz spinach
  • 2 garlic cloves
  • 2oz or so of garlic and fine herbs Boursin cheese
  • 3 tbsp chopped fresh parsley (I used fresh dill one time because that was what I had, still delicious)
  • 2 tbsp olive oil
  • salt and pepper to taste

Directions

  • add oil to hot heavy bottom pan
  • slice mushrooms and shallot and cook until tender
  • add orzo and toast for about 1 minute, stirring consistently
  • add garlic and cook until fragrant
  • pour in stock and lemon juice and bring to a boil
  • While orzo is coming to a boil, heat oil in pan to sear salmon
  • dry filets and add salt and pepper, start in hot pan skin side up
  • cook for 4 minutes then flip and cook for another 3 or so, depending on how you like your salmon cooked
  • once orzo is boiling stir often and cook until liquid is mostly absorbed, then add spinach to wilt
  • finish with parsley, Boursin and lemon zest and serve

If you prefer to bake your salmon go for it, whatever is easiest for you.
