Shrimp Scampi Alfredo
One more from the lemony, seafood, pasta files! The added parsley really brightens up the flavor and the Parmigiano is a perfect finish. All that and paired with our 2025 Rosé!
Ingredients
- 1 lb. linguini
- 1 Tbsp. olive oil
- 4 Tbsp. unsalted butter, divided
- 1 small shallot, finely diced. About 1/3 cup
- 2 cloves garlic, minced
- 1/2 tsp. red pepper chili flakes (optional)
- Juice of 2 lemons, (about 1/4 - 1/3 cup lemon juice).
- 1/2 cup white wine (you can substitute water or stock if you needed)
- 16 oz shrimp, 31 - 40 size
- 15 oz jar of prepared Alfredo sauce (or make your own if you prefer)
- Fresh Parsley, chopped
- Freshly grated Parmigiano-Reggiano
- Salt and pepper to taste
Directions
- Bring large pot of salted water to a boil and cook pasta according to directions.
- Add 2 tbsp. butter and olive oil to a large frying pan over medium heat, once hot, add shallot. Cook for 2 minutes stirring occasionally.
- Add garlic, salt, pepper, chili flakes and stir for 30 seconds or so. Add white wine and lemon juice and simmer for 2 minutes.
- Add shrimp, 2 remaining tsp. of butter, and Alfredo sauce and let simmer until the shrimp just begins to turn pink.
- Stir in prepared linguini, parsley, finish with Parmigiano-Reggiano and serve.
