Smash Burgers

What pairs with Malbec AND Graciano? Burgers, that’s what.  I’ve been on a smash burger kick but if you prefer a thick, juicy burger grilled to medium by all means do that.  Condiments?  We’d be here all day debating the best ones so this is just my style, at the moment, and I reserve the right to change my mind so do what feels right and open that bottle and enjoy!

Ingredients

  • 4 ounces 80/20 ground beef, divided into 2 ounce portions
  • Soft burger bun
  • thinly sliced sweet onion, I use a mandolin to get them very thin
  • good melting cheese, American, cheddar, swiss, whatever you enjoy or have on hand
  • salt and pepper to taste
  • burger sauce (recipe below)
  • dill pickle slices (optional)

Directions

  • Prep bun by toasting and putting pickles on the bottom
  • lay pile of onions on preheated and lightly oiled cooking surface and smash meat on top, once smashed leave to caramelize for a minute or so, season with salt and pepper.
  • Use metal spatula to scrape and flip when ready, immediately add cheese to cooked side with onions.
  • Stack burgers on top of bottom bun, add more burger sauce and enjoy.

Burger Sauce

  • 1/2 cup full fat mayonnaise (I use Duke’s)
  • 1 tbsp yellow mustard
  • 1 tbsp ketchup
  • 1 tsp dill pickle brine
  •  pinch cayenne pepper (optional)
  • salt and pepper to taste
